I don’t know about you, but as the days get shorter, and the weather gets colder – all I crave is good old fashioned comfort food. And one of my (and Mike’s) all-time favourite comfort foods is most certainly a classic – chicken pot pie.

But after a long day at the office – the last thing I want to do is spend hours in the kitchen, hunched over a stove cooking. I mean, I always have a glass of wine in hand while cooking…but even that’s not enough motivation for me to spend hours in the kitchen on an average Tuesday night. So that’s when I start looking for quick and easy alternatives to some of the classics, and I recently found a recipe that’s now a new favourite in our house!

Easy Peasy Stove-Top Chicken Pot Pie

This recipe is not only easy – but it’s also quick. Using a pre-cooked rotisserie chicken really cuts back on cooking time. Seriously – with prep and everything, we were seated with a piping hot bowl of deliciousness within 40 minutes. I made some slight modifications to the one I found online, and like I said – it’s a new favourite in our house…especially on those cold days. Which, if you’re living up here in Toronto like us – are quickly approaching!

Ingredients

1 tube Pillsbury biscuits
1.5 cups low sodium chicken broth
1 cup whole milk (I used 2% and it worked just fine)
3 tablespoons all-purpose flour
1.5 teaspoons poultry seasoning
1 small onion, chopped
1 cup carrots (we sliced our finely)
3 tablespoons butter
2 cups shredded rotisserie chicken
1 cup frozen peas

Directions

    1. Prepare the biscuits according to the package instructions.
    2. In a large mason jar, mix together the chicken stock, milk, flour, and poultry seasoning. Shake well.
    3. Cook the carrots, onion, and butter in a large saucepan over medium-high heat until the vegetables are softened. This should only take 2-3 minutes.
    4. Slowly (s-l-o-w-l-y) whisk in the milk and broth mixture, and bring to a boil.
    5. Reduce the heat and simmer – stirring often. This is when it will all thicken up, so make sure you keep stirring for 6-8 minutes.
    6. Mix in the shredded chicken and frozen peas and cook for another 4-5 minutes, until everything is warmed through.
    7. Season with salt and pepper, and serve topped with the biscuits.

Bing. Bang. Boom. That’s it! This Easy Peasy Stove-Top Chicken Pot Pie is ready to be devoured!

Oh, Hello October – Nice To See You Again

Can you believe it’s already October? Honestly, it feels as though 2017 and is just flying by. I don’t know what it is…maybe time just seems to go by that much quicker the older we get?

*sigh*

Whatever it is, I’m making a genuine effort to slow down in my day to day life and make the time to enjoy the moments, both small and big.

This past week or so was no exception. Between birthday celebrations (not mine, yet), fun events, and an impromptu date night – it was definitely one for the books!

Last weekend, I took Jen out for a celebratory birthday dinner. Jen is one of those friends that while we met each other later in our lives (like, seriously – only a couple of years ago) – we instantly clicked. SHe’s become one of my closest friends, and I am incredibly lucky to have a friend like her in my life. Anyways, enough with the mushy gushy stuff! We headed out to Marben for our girls night, and there was wine, there was delicious food, and there were glasses of bubbly. Throw in the great company, and what more could a gal ask for!?

On Tuesday evening I invited my friend Shannon out to check out the media paunch of the new brewhouse, Northern Maverick Brewing. First off – the space is gorgeous. I absolutely loved the open ceilings, and you can see the tanks where they brew their in-house brewskiis. Not only are their in-house brewed brewskiis delish – but they also make some ahhhhmazing cocktails. There were A LOT of people at the media launch, so I didn’t get a chance to fully experience the restaurant – but I’m def looking forward to heading back. I hear the burgers are legit some of the best in the city…I’ll just have to try it out for myself and report back!

One of the fun things I get to do through my blog is go to fun events and launches and tastings and parties. And every now and then a brand, or product, will stick out a little more so than the others. Recently, that was D’Ont Poke the Bear wines.

I went to my home away from home, the iYellow Wine Club for an intimate evening spent with wine lovers galore and one of the D’Ont Poke the Bear winemakers and founder, Andrew Von Teichman.

I’m Not Lazy…I’m Time Efficient (Or Hungover) – But truLOCAL Saved The Day(s)

One of my new-found favourite pastimes is getting up on Saturday or Sunday morning and heading to the grocery store with Mike to do a big shop. We’ll get stuff to make for breakfast that morning (along with the obligatory stop at the liquor store for brunch cocktail necessities), a variety of things for lunches throughout the week, and usually at least a few days worth of dinner supplies. It’s something so simple and pure – but when we go, it’s just he and I spending that time together. No phones as distractions, no TV to watch…just the two of us cracking jokes throughout the supermarket.

That being said, this lovely pastime doesn’t get to happen on a regular. Sometimes Mike works on the weekend, sometimes we’re very lazy and prefer to just stay home and in our PJs all day (or, as was the case most recently – I was too hungover thanks to the #TIFFBachelorParty). But either way – our fridge needs to get stocked and it’s not always convenient to make stops after work for whatever we need for dinner. Especially when we have a really busy week lined up, with a few different days scheduled of entertaining guests at our place.

Such was the case recently when we had a few friends over for a BBQ and games night, then Mike’s parents over for another BBQ the following day…not to mention our weekly date night dinners at home which is another favourite pastime of mine.

Sometimes A Gal Just Needs A Little Alone Time With Montes Wine

Mike and I have officially been living together for a few months now, and while it’s still glorious (s/o to the Roode crew, y’all know who you are) – I have to admit – it is not always easy.

Moving in together is a BIG step in a relationship, no matter how long (or short) you’ve been together. Before we moved in together, we were spending almost all of our free time together. We were together more often than not, spending nights at each others houses. But living together – phew, that’s a whole different thing.

Let me preface this next little bit by saying, I simply adore Mike. He is literally my most favourite person in the world. Being with him makes my heart happy and I love spending time with him.

That being said…a gal needs her alone time. Am I right? If you are, or ever have, living with a partner (or heck, even with roommates) you’ll know what I’m talking about. There are just some things that you need want to do and can only do when you’re alone, and on top of that – sometimes a gal (or guy) just needs a little peace and quiet and alone time.

Thankfully, I’ve been blessed with a man who totally understands and appreciates this. Unfortunately for him, I can be somewhat needy and a homebody – so he may not get as much alone time. LOL

BUT – for the record, this IS something I’m working on. So, there’s that.

Anyways…back to what I was saying.

As someone who lived on her own for many years prior to moving in with Mike, I crave my alone time. It’s not even like I’m really doing anything in particular (for the most part) – but sometimes I just want to put on a face mask, paint my toe nails, and pour myself a nice glass of wine and listen to early ’90’s pop music. You know what I mean?

Anyways, that’s exactly what I did the other night while Mike was working late, and it was fanfreakingtastic.

My friends at Montes Wine sent me over a few bottles of Montes Spring Harvest Sauvignon Blanc 2016 and Montes Alpha Cabernet Sauvignon 2014 to try. I cracked open the Cab Sauv, poured myself a nice, big glass and covered my face with a charcoal mask as I painted my toenails.

Apples And Rope Swings And Alpacas – Oh My! Our Day At Chudleigh’s Farm

I grew up in a single-parent household. My mother was (and still is) one of the most hard-working people I have ever met. She struggled day in and day out to provide for my sister and I, to ensure there was food on the table and a roof over our heads. We didn’t get a lot of the same privileges my peers would get. I can remember going to school on a Monday morning, or after summer break, and hearing tales of what my peers got up to. Be it escapes to the cottage or camp, or even day trips on fun-filled excursions, and feeling a pang of resentment and jealousy.

Now that I’m (many, many) years older – I can fully grasp just how difficult it must have been for my mother. Struggling to get by, with little to no outside help…wishing that she could do just a little bit more. Mommy (yes, I still call my mother Mommy – she’s even saved in my phone contacts as such) – if you’re reading this – THANK YOU. Thank you for always being there and doing the absolute best you can. I think my sister and I turned out pretty darn great, if I do say so myself!

That being said, while I may not have any kids of my own (as of yet), I have been fortunate enough to be blessed with some amazing opportunities. And when such fun and exciting family-orientated opportunities come my way, I try to involve my nieces as often as possible.

I brought my sister and nieces out for a fun-filled day on at Chudleigh’s Farm full of delicious foods, apple picking, hay rides, alpacas, and so much more!

Listen, I don’t know about you – but I absolutely love the autumn. The weather is cool enough for a sweater or light jacket, but not so cold that you need your winter parka. The leaves are changing colours showing us just how beautiful it is to let go of the things that are holding us back from growth. Well, the fun doesn’t have to stop now that we’re no longer in school!

It’s just another manic Monday…I wish it were Sunday.

All together now, “It’s just another manic Monday…I wish it were Sunday…”


It’s been a little while since I just checked-in here on le blogaroo. If you follow me on Twitter (or Instagram, or Snapchat, or even Facebook) you’ll know that I moved at the beginning of May. My BF (Mike) and I found an amazing apartment, and decided to take the plunge and move in together. It’s been a full month now (we actually got the keys a couple of days before May 1st) – and while it isn’t always easy – it’s been a great month and I couldn’t be happier!

So needless to say, between unpacking and building furniture (ok, I mainly supervised the building of the furniture), and just settling in to the new routines (plus catching some Blue Jays games in between) – things have been a bit hectic. Hence, the lack of blog posts. Sorry! But now that we’re all unpacked and settled in – I’m back and excited to share so much with you guys!

The first week we moved in – there was SO much going on and the last thing I wanted to do was go to a grocery store and shop. Luckily my friends at HelloFresh came to my rescue!

The birds are chirping, the sun is shining…spring has officially (and finally) sprung! Which also means…it’s time the Blue Jays!

The boys in blue are back this year and I for one couldn’t be more excited. No, seriously – I tried and I physically could not be more excited. My body just couldn’t do it. THAT’S how excited I already am! LOL

Last season was one of my all-time favourite Blue Jays seasons. Not only did the Blue Jays have a decent run, but I got to experience a handful of games in person at the ballpark, and even more in the comfort of my own home.

This season may not have started off on the best foot for our boys, but I had the opportunity to go to 3 games within 4 days…which was awesome!
